Pork Seitan

makes 4 chops


1 cup dried soy chunks

1 tablespoons soy sauce

1 teaspoon sesame oil

2 tablespoons tahini

2 tablespoons doenjang (Korean soybean paste) or miso

1 tablespoon nutritional yeast

1 tablespoon maple syrup

1 cup wheat gluten


  1. Add all of the ingredients except the gluten to a bullet blender with a cup of water.

  2. Blend until smooth and tip out into a mixing bowl.

  3. Stir in the gluten until a ball is formed.

  4. Knead for around 5 minutes.

  5. Let it rest for 10 minutes.

  6. Cut the dough into 4 pieces and form into chops or desired shape.

  7. Steam for 40 minutes.
