Spelt Chocolate Chip Cookies (vegan, less sugar)

It's been a tough week. It's hard to spend time writing sometimes when I'm feeling blue and I can be a bit of a perfectionist about posting. I decided if something's tasty, I should share it, whether I have a huge story to tell or I just baked something to cheer our family up.

Cookies, anyone?

Spelt Chocolate Chip Cookies

makes 8 large cookies

Ingredients ½ cup butter of choice (I used a sunflower plant based vegan one) ½ cup (plus a little for sprinkling) coconut sugar or brown sugar

1 cup sifted spelt flour ½ teaspoon baking powder

2 tablespoons milk of choice (I used soy)

1½ cups chopped chocolate pieces, chunks or chips

A couple of pinches of sea salt


  1. Preheat the oven to 180c (350f)

  2. Cream together the butter and sugar until light in colour and softened.

  3. Add the flour, baking powder and milk and stir until just combined.

  4. Fold in the chocolate.

  5. Roll the dough into 8 balls and place on a lined oven tray.

  6. Squash each ball to half its height with clean hands.

  7. Sprinkle some sugar and salt on top of each cookie.

  8. Bake for 15 minutes or until just colouring slightly.

  9. Allow to cool and firm up for 30 minutes before enjoying!
